Recipe Contest: Butter-style Chicken with Raita Sauce

Marinate the chicken:

  • 8 Maple Leaf Prime Thighs or 4 Maple Leaf Prime Breasts
  • 1 tbsp garam masala
  • 2 tbsp Astro Balkan Yogurt
  • 1 tsp cumin
  • ⅛ - ¼ tsp cayenne pepper

For the butter-style sauce:

  • 2 tbsp butter
  • 1 inch piece ginger, peeled & finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp garam masala
  • 1 tbsp cumin
  • ⅛ tsp cayenne powder
  • ½ + ¼ cup Natrel half & halfcream

For the Raita:

  • 1 cup Astro Balkan Yogurt
  • 1 finely chopped green onion
  • 2 tbsp finely chopped cilantro
  • 2 Kosher Dill Vlasic Pickles, Grated
  • Optional: ½ tsp lemon zest

To Make:

Marinate Chicken - 20 minutes

1.Dice the Chicken into 1” cubes, add in seasonings & yogurt. Set aside for 20-minutes.

2.Heat pan to medium heat, and add in chicken. Cook on either side (about 4-minutes). Remove from pan, set aside.

3.Turn down the heat to medium low, and add in butter, ginger & garlic. Then add garam masala, cumin and additional cayenne and toast for about 1 - 2 minutes.

4.Add ½ cup Half & Half cream and can of crushed tomatoes.

5.Stir to combine, and then add back in the chicken (with any juices). Simmer on medium-low for about 20-minutes until flavours have combined.

6.Add remaining ¼ cup cream, and frozen peas and stir through until just combined and heated through, about 5 minutes. Serve immediately

Marinate Chicken - 20 minutes

1.Start by grating two pickles, and squeezes out any extra juices gently with your hands.

2.Place in small bowl and add all additional ingredients.

3.Chill until ready to serve alongside butter chicken.

Serve as a great dip with something like Tostitos, or as a meal with a side of rice!
